Soup, Soup, Soup

I've been on a soup kick lately, and it is not because it is cold outside.. I live in Arizona and it's been in the 80's.  It is just tasty and soooo convenient!   Not the kind from a can, but homemade.. with the help of store bought items.

I recently discovered various Swanson's flavored chicken broth.  My 2 favorite are Thai Ginger and Mexican Tortilla.  The Thai has a bit more sugar than I would like, so I usually limit myself to a half cup (3 carbs).  But the Mexican is perfect at just 2 carbs per cup.  I also find Tyson's Grilled & Ready chicken strips perfect.  I dice the chicken and veggies up into small pieces, sauté with additional spices, and then add the broth.  For the Thai soup, I even used my Joyce Chen spiral cutter to make zucchini noodles.
